Savor every sip of this delectable Daiquiri—slightly sweet, with a hint of citrus—that gives you the chance to make use of a medley of any of your leftover fruits, peels and stems!


  • 2 oz. white or aged rum
  • 1 oz. chopping block cordial (see instructions below)


  • 1,000g mixed fresh off-cuts (use bruised fruits, citrus peels or mint stems—or other fridge items about to become unusable—for the cocktail’s flavor)
  • 1,000g water
  • 240g granulated sugar
  • 24g citric acid powder
  • 12g malic acid powder


  1. Add all ingredients to a cocktail shaker
  2. Add ice and shake for 8-10 seconds
  3. Double strain into a Nick & Nora glass
  4. Garnish with a lime twist
