INGREDIENTS
- 2 oz. white or aged rum
- 1 oz. chopping block cordial (see instructions below)
CHOPPING BLOCK CORDIAL
- 1,000g mixed fresh off-cuts (use bruised fruits, citrus peels or mint stems—or other fridge items about to become unusable—for the cocktail’s flavor)
- 1,000g water
- 240g granulated sugar
- 24g citric acid powder
- 12g malic acid powder
Method
- Add all ingredients to a cocktail shaker
- Add ice and shake for 8-10 seconds
- Double strain into a Nick & Nora glass
- Garnish with a lime twist
